Hakhles, a type of a boat-shaped trahana, is an exclusive specialty of Lesvos. They are made of milk and wheat and shaped by hand. They took their name from the flat, oval, small saucers for demitasse coffee cups.



1 cup trahana

3 cups water of beef, chicken or fish broth



Step 1

Add grated tomato (and green pepper, optionally) and season with salt/pepper.

Step 2

Simmer for 40 minutes until soup thickens.
