Syrupy sweet are mostly made with fruit or vegetable preserves. In Lesvos a beautiful syrupy sweet is made with olives as its ingredient, the trademark product of the island.
INGREDIENTS
1 kg. green olives
1200 gr. sugar
4 cups water
Juice for one lemon or 1 tsp. citric (tartaric acid)
Apple (rose) geranium, cinnamon
PREPARATION
Step 1
Soak olive in water for two day to do away with their bitter taste.
Step 2
Make syrup by boiling water mixed with sugar. Dip the olive in the syrup for a little while.
Step 3
Turn off the flame. Remove the pot. Bring to boil the next day adding the lemon juice.
